    If I may ask, what brand milk and curd do you use to set curds? We ( roomies, and mom when she visited) have had no luck with making curd at home in SG! Help!

    1. of course you may ask! i have made curd with pretty much every milk available here, with mixed results. what works best for me now is UHT milk in 1 litre cartons. I have zeroed in on Dutch Lady UHT milk and Nestle yogurt. What I have also seen is, the milk needs to be pretty hot for it to set, definitely hotter than what we are used to in India. Since I have a husband who consumers curd by the cup-ful, I can't afford to keep buying readymade ones. And oh, the milk needs to be full cream.

    2. I have tried with Dutch Lady as well. Did not turn out well. Actually, it simply did not set and was milky for overnight. Does it take longer than overnight to set? Does it work when you boil milk in MW and set it? Is curd added when it is steamy hot ( as in the pic) ? I consume one nestle box in two meals :P. That is why I am so desperate to work this out.

    3. no it doesn't need to be this hot but as soon as the steam settles and you can insert a finger into the milk and not want to pull it back immediately, go ahead and add 1 tsp of curd. add a bit more if you need to and always use nestle. microwaving is fine but it has to be really hot, just make sure of that. i boil on stove-top because i felt that microwaving is not working. that's silly though, it should as long as the milk is hot enough

  2. Love this pic! Sorry to butt into your conversation :D but it reminded me of when we lived in Saudi, my mom used to get a small container of curd from her mom every time we visited India, and set it as soon as we got back home. That used to set beautifully. Once it set, a little bit of each day's curd was put aside for setting more. I don't like the curd set from store-bought yogurt very much.

  3. Yaay :) It happened! I used curds bought from Komalas. Now,please dont consider me mad. I went from work to Little India and bought two boxes curd and used it to set. It came out so well. Nestle also worked once; but the komalas one was brilliant!
